Strawberry Meadows Blond Lager Popsicles

As summer approaches, fill your freezer with a batch of my Strawberry Meadows Blond Lager Popsicles for a quick cool down. Fresh strawberries are cooked into an almost jam-like consistency and mixed with Strawberry Meadows Blond Lager, which adds a deliciously malty undertone to the sweet treat. The popsicles only have six ingredients and are extremely easy to make. In fact, the hardest part of the recipe is waiting for the popsicles to chill overnight before devouring them. Don’t have popsicle molds? No problem. Freeze the mixture in a brownie pan and break it up with a fork before serving for a tasty adult slushy. Whatever the format, just be sure to eat them before they melt!
Ingredients:
2 cups of roughly chopped strawberries
1 tablespoon of water
1 cup of sugar
¼ teaspoon of salt
the juice of 1 lemon
1 cup of Strawberry Meadows Blond Lager
Directions:
Place the chopped strawberries, water, sugar, salt and lemon juice in a medium pan set over medium-high heat. Stir the strawberries frequently and watch the pan carefully as the berries will bubble up.
Cook until the strawberries are tender and the liquid has become syrupy. This will take about 10 minutes.
Remove the mixture from the heat. Using a fork or a potato masher, pulverize the strawberries into a jam-like consistency.
Mix in the beer and let the mixture cool.
Pour the popsicle liquid into popsicle molds (it makes about 6). Let the popsicles freeze overnight.
To remove the popsicles from their molds, dip each mold in warm water for a few seconds to loosen it and squeeze the sides of the mold to ease the popsicle out.
Once removed from the mold, enjoy immediately! As these popsicles are all natural, they can melt quickly!
Recipe Notes:
You can freeze the popsicles overnight or even up to two weeks.
If you don’t have popsicle molds, pour the liquid into a freezer-friendly container and freeze overnight. To serve, break it up with a fork creating a slushy like treat!
